      <image:title>STORIES - Moroccan spiced tomato and red bell pepper soup - MOROCCAN SPICED TOMATO &amp; RED BELL PEPPER SOUP WITH ISRAELI COUSCOUS &amp; MINI MEATBALLS Yield: 8-10 servings INGREDIENTS For the soup base: 6 red bell peppers, sliced in half 10 medium tomatoes on the vine, sliced in half 1 sweet onion, chopped 1 shallot, chopped 2 tbsp ghee or clarified butter 1 tsp Moroccan Vas el Hanout seasoning 2 cups vegetable broth 2 cloves garlic, minced 1 cup Israeli couscous For the mini meatballs: 1 lb ground beef, 85% lean 1/2 red onion, minced 1 tbsp fresh mint, minced 1/2 tsp ground pepper 1/2 tsp salt 2 tbsp ground bread crumbs 1 egg 1 tbsp fresh lemon juice For the yogurt coulis: 1/2 cup whole milk greek yogurt 1 tsp fresh lemon juice 1 tsp fresh mint, minced 1/4 tsp ground pepper INSTRUCTIONS Preheat the oven to broil at 500 degrees Fahrenheit. Place halved bell peppers and tomatoes on a baking sheet face down. Place on center rack in oven, and roast for 15 minutes, turning the baking sheet every 5 minutes so that the peppers and tomatoes roast evenly. In the meantime, using a dutch oven or large, heavy bottomed pot, melt the ghee over medium heat. Then add the onion and shallot, and sauté for about 15 minutes over low heat until completely caramelized. Once the peppers and tomatoes are nicely charred on the outside and tender on the inside, remove from the oven. The skin should easily fall off if you peel it away using your fingers, but make sure to way until they've cooled down a bit! De-skin the tomatoes and bell peppers, and then add them to the pot with the caramelized onions and shallots. Add the Moroccan Vas el Hanout seasoning and vegetable broth to the mixture, and let simmer over medium heat for 30 minutes. While the mixture is simmering, make the mini meatballs. In a large bowl, add the ground beef, garlic, red onion, mint, bread crumbs, fresh lemon juice, ground pepper, salt, and egg. Mix together until well combined (I like to use my hands!). Take a teaspoon of the mixture at a time and roll into a small ball using your hands, and place on a plate or cutting board. This mixture made about 30 mini meatballs. In a large skillet, melt 1-2 tsp of ghee over medium-high heat. Then place the meatballs in the skillet in even rows, and brown the meatballs on all sides, about 1 minute or so per side, until a golden deep brown. Set aside. After the base soup mixture has simmered for 30 minutes, blend the mixture together into a puree in the pot using a hand immersion blender. If you don't have a hand blender, you can pour the mixture from the pot into a normal blender and puree it that way. Make sure not to overfill the blender as the hot mixture will create steam as it blends and may overflow! Once the mixture is a smooth puree, add the meatballs to the pot, and mix to coat the meatballs. Simmer on low heat for 1 hour. At the 1 hour mark, stir in the Israeli couscous, and simmer on low heat for 1 more hour. Before serving, season with salt and pepper to taste. To make the yogurt coulis, mix together the greek yogurt, lemon juice, mint, and ground pepper. Serve a tablespoon sized dollop or swirl of the coulis with each bowl of soup for that extra pop of flavor!</image:title>

Prepare 2 six slot cupcake tins with festive cupcake liners. For the cake, whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl. Then add the melted butter, buttermilk, water, egg, and vanilla extract to flour mixture. Whisk to incorporate at first, then whisk vigorously for 1 minute until the batter is smooth with no big lumps. Distribute cake batter evenly among the cupcake slots, about 3/4 of the way high. Bake for about 15-20 minutes on the center rack, until a toothpick or cake tester inserted in the center comes out clean. Remove from the oven and allow to cool completely on a wire rack or somewhere else away from the oven. You can even put them in the refrigerator if you want! To make the frosting, whip the butter in the bowl of a stand mixer with the whisk attachment or in a large bowl with a hand mixer. Then, add the powered sugar 1 cup at a time to the butter as well as 1 tbsp of cream at a time, alternating between the two until all is incorporated. Add the vanilla and vanilla bean paste at the end. Whip the frosting on high for 1 minute until the frosting is fluffy and light. Once the cupcakes are completely cool, release them from the pan gently. To get that Sprinkles-like vibe, take a big dollop of frosting and spoon it onto the top center of the cupcake. Using an offset spatula, spread the frosting from inside out, while maintaining a big mound on top. Then use the spatula to scrape it downward to the edges creating a slope. Go back around the edges and scrape like a cake to smooth it out. Decorate using a variety of sprinkles on top, or dip the frosting in a bowl of sprinkles, making sure it covers all the frosting!</image:caption>

      <image:caption>Yield: (1) 6-inch round cake INGREDIENTS For the Vanilla Almond Cake: 1 1/2 cups all-purpose flour 1 cup sugar 1/2 tsp baking soda 1/2 tsp baking powder 1/2 tsp pink himilayan salt 1/2 cup buttermilk 1/4 cup melted butter 1 eggs 2 tsp vanilla extract 1 tsp almond extract 1/2 cup water For the Berry Compote:  2 cups of mixed fresh berries - strawberries, blackberries, blueberries, raspberries, save a couple of berries for decorations 1 cup sugar For the Vanilla Frosting: 1 cup butter, softened to room temperature 6 cups powdered sugar 4 tbsp heavy whipping cream 1 tsp vanilla bean paste 1 tsp vanilla extract INSTRUCTIONS Pre-heat oven to 350 degrees Fahrenheit. Prepare two 2 inch high x 6-inch diameter round cake tins with a butter spray and a little bit of flour to coat all sides. This will allow the cake to release from the pan easily. For the cake, whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl. Then add the melted butter, buttermilk, water, egg, vanilla, and almond extract to flour mixture. Whisk to incorporate at first, then whisk vigorously for 1 minute until the batter is smooth with no big lumps. Distribute cake batter evenly among the cake tins, about 3/4 of the way high. Bake for about 30-35 minutes on the center rack, until a toothpick or cake tester inserted in the center comes out clean. Remove from the oven and allow to cool completely on a wire rack or somewhere else away from the oven. You can even put them in the refrigerator if you want! While the cake is baking, make the berry compote by adding washed berries and sugar to a small pot on the stove. Heat on medium until sugar dissolves and begins coating the berries. Using a wooden spoon, fold the sugar syrup over the berries for a few seconds to coat them all without breaking up the berries too much, and then set aside to cool completely. To make the frosting, whip the butter in the bowl of a stand mixer with the whisk attachment or in a large bowl with a hand mixer. Then, add the powered sugar 1 cup at a time to the butter as well as 1 tbsp of cream at a time, alternating between the two until all is incorporated. Add the vanilla and paste at the end. Whip the frosting on high for 1 minute until the frosting is fluffy and light. If you have piping bags, brush a little bit of the compote around the inside of the piping bag. Insert your favorite piping tip, cut the bottom off, and spoon the frosting into the piping bag. Twist the end to create pressure and seal the frosting in, and set aside until you’re ready to decorate. Once the cakes are completely cool, release them from the pan gently. To help, put your hand on the cake, flip over the pan, and gently pat the tin until the cake releases. Using a serraded knife, level the each cake layer by cutting off the crusty top part about 1/4 inch and set aside. Then, slice each cake layer in half to create four layers altogether. Assemble the cake by putting one layer of cake on a cake plate, cake board, or pedestal. Then pipe your frosting around the edge of the cake in a circle. In the center, take a spoonful of the berry compote and spread out evenly to the edges where the frosting is. Place another cake layer on top, and repeat the process one more time with the final cake layer on top. Place in the fridge for 10 minutes to let the frosting and filling set. Using your piping bag or even an offset spatula, it’s time to crumb coat your cake! Spread the frosting evenly in the sides and top of the cake. Using an offset spatula, knife, or cake scraper, scrape any excess frosting off to ensure even coverage. Put back in the fridge to chill and set for at least 30 minutes. Do the final coating of frosting using your spatula and any remaining frosting that’s left! Top with the rest of the berry compote and the extra fresh berries as a garnish! Place in fridge for up to 1-2 days to serve later or serve immediately!</image:caption>

      <image:caption>CLASSIC EGG-IN-A-HOLE Yield: 1 serving INGREDIENTS 1 slice of buttermilk bread (you can sub for any particular kind you like!) 1 tbsp butter 1 egg Pinch of salt Pinch of fresh ground pepper 1 tsp ground Herbs de Provence INSTRUCTIONS Using a circular cookie cutter or even a small juice glass, cut out a hole in the center of your bread slice. Set the bread round aside. In a small, nonstick skillet, melt the butter on medium high heat. Once the butter is melted, place the slide of bread (now with a hole in it) in the center of the skillet to soak up a little bit of the melted butter. Then immediately flip the bread slice to the other side. Next, take the egg, and crack it directly into the center of the hole in the bread. Make sure to not get any egg shell in the center, and ensure that it doesn't leak out at the bottom. Let cook on medium heat for about 1-2 minutes, until the egg white starts bubbling and firming up on the bottom and the bread is toasted. Then, when ready, flip the entire slice of bread and egg over onto the other side. Let cook until the egg center firmly bounces to the touch, about 1-2 minutes. Remove from heat, and serve immediately with fresh ground pepper, a pinch of salt, and Herbs de Provence on top. For additional fun, you can also toast the bread round that was cut out in the same skillet that you used for the egg-in-a-hole, and serve it with the rest of the dish.</image:caption>

      <image:caption>INGREDIENTS 6 pluots, pitted and halved  1 cup port wine  3 cups flour  1 tsp salt 1 tsp baking soda 1 tsp baking powder 1 cup granulated sugar  1/2 cup packed dark brown sugar  1/2 cup butter, melted 2 eggs 1/2 cup boiling water  2 tbsp butter, melted INSTRUCTIONS At least 24 hours prior to baking, soak the pluots in the port wine in a sealed bowl or tupperware. Place in fridge until ready to use. Pre-heat oven to 350 degrees Fahrenheit. Before making the batter, separate the pluots from the port wine and set aside. Then, take the port wine, and pour into a small sauce pan. Place on the stove, and bring to a boil, and let reduce over high heat for about 5 minutes. Once the port reduction is done, set aside. In the bowl of a stand mixer, add the flour, salt, baking soda, baking powder, granulated sugar, and dark brown sugar. Mix until combined, about 1 minute. Then add the 1/2 cup melted butter and mix to incorporate. Add in the eggs one at a time, mixing until incorporated completely. Then add the boiling water little by little, mixing at low speed until combined. Then turn the mixer to high, and mix for 1 minute on high.  In a 9 inch non-stick cake pan, pour the melted butter. Arrange the port-soaked pluots half side face down in the pan. Pour the port wine reduction over the pluots. Lastly, pour the cake batter on top of the pluots until it fills the pan about 3/4 of the way high. Place in the oven, and bake for about 45 - 50 minutes, or until toothpick comes out clean when placed in the center. Let cool on a wire rack until. Once cooled, flip the pan over onto a plate, and let the cake gently come out of the pan. Serve immediately. Enjoy!</image:caption>

Prepare two 6-piece mini bundt cake molds/pans by spraying the insides with nonstick cooking spray. In a large bowl, whisk together the mashed bananas, brown sugar, melted butter, dark rum, maple syrup, vanilla extract, and milk to make a slurry. Then add the flour, salt, baking powder, baking soda, and cinnamon. Whisk to combine. Batter should be smooth with no lumps.       <image:caption>Yield: 24 mini meatloaves INGREDIENTS For the mini meatloaves: 2 lbs 80/20 ground beef 1 onion, finely chopped Juice from 1 lemon Fresh sage, chopped 1 tsp salt 1 tsp ground pepper 2 eggs 1 cup plain bread crumbs 6 slices of bacon, cut into fourths For the mashed potatoes: 2 potatoes, peeled and cubed 1/4 cup heavy cream 1/4 cup unsalted butter 1 clove garlic, finely chopped 1/2 tsp salt 1/2 tsp ground pepper 2 tbsp whipped cream cheese INSTRUCTIONS Preheat oven to 375 degrees Fahrenheit. Start on the mashed potatoes first by bringing a large pot of water to a boil. Once boiling, add the skinned and cubed potatoes, and boil for about 20 minutes until they slide off a knife or fork without any effort. While the potatoes are boiling, make the mini meatloaves. Add the ground beef, onion, lemon juice, sage, salt, pepper, eggs, and bread crumbs to a large mixing bowl. Mix together (I like to use my hands) until all ingredients are evenly incorporated. Place about 1/2 to 3/4 cup of the mixture into nonstick cupcake tins, and top each one with a small slice of bacon. The mixture should be enough to make about 24 mini meatloaves. Place mini meatloaves in oven and bake for about 30 minutes, or until golden brown along the edges and completely cooked through. Remove from the oven and set aside. Once the potatoes are ready, drain the water from the pot, and leave the potatoes in there. Add the cream, butter, garlic, salt, pepper and whipped cream cheese to the pot. Blend together using a hand mixer or whisk until smooth. Using a piping bag or large spoon, top each mini meatloaf with mashed potatoes to make it look like "frosting". Garnish as you'd like with leftover fresh herbs or a sprinkling of pepper, and serve immediately with ketchup or BBQ sauce on the side!</image:caption>

Prepare two 12-count cupcake tins with cupcake wrappers. For the cake, sift together flour, sugar, baking powder, baking soda, and salt. Add flour mixture to the bowl of a stand mixer. Then add cream, melted butter, eggs, vanilla, and vanilla bean paste to flour mixture. Mix on medium speed until well combined. Reduce speed and carefully add boiling water to the cake batter. Beat on high speed for about 1 minute to add air to the batter. Add the rainbow sprinkles and mix until just combined.  Distribute cake batter evenly among the cupcake tins, about 1/4 cup batter per cupcake. Bake for about 25-30 minutes, until golden brown and a toothpick or cake tester inserted in the center comes out clean. Remove from the oven and allow to cool for about 10 minutes. Then, remove the cupcakes the pans and cool completely on a wire rack.  To make the frosting, cream the butter in the bowl of a stand mixer. Then, add the sugar and cream to the butter, alternating between the two and using only a cup of powdered sugar and a couple of tablespoons of cream at a time. Add the vanilla at the end, mixing until combined well.  Once the cupcakes are completely cool, use a piping bag to frost the cupcakes. Prepare three 9 inch, round cake tins. For a how-to guide to preparing cake tins, click here.  For the cake, sift together flour, sugar, cocoa, baking powder, baking soda, salt and espresso powder. Add flour mixture to the bowl of a stand mixer. Then add cream, melted butter, eggs, and vanilla to flour mixture. Mix on medium speed until well combined. Reduce speed and carefully add boiling water to the cake batter. Beat on high speed for about 1 minute to add air to the batter. Distribute cake batter evenly between the three prepped cake tins, about 3/4 full. You may have leftover batter to make an additional layer if desired. Bake for about 35 minutes, until a toothpick or cake tester inserted in the center comes out clean. Remove from the oven and allow to cool for about 10 minutes. Then, remove from the pan and cool completely on a wire rack. Once completely cooled, wrap each layer up in saran wrap and foil, and place in the freezer for at least 15 minutes, and up to 2 days ahead. This will help prep the cake for assembly and make it easier to level the layers.  While the cake is cooling, make the chocolate ganache filling. Melt the chocolate, cream and butter in a glass bowl over a double broiler, or microwave for about 30 seconds at a time on the highest level until completely melted. Make sure to stir the chocolate in between each 30 second interval. Once melted, continue to stir together until all ingredients are incorporated and the ganache is silky smooth. Set aside.  To make the frosting, cream together the cocoa powder and butter in the bowl of a stand mixer. Then, add the sugar and cream to the butter / cocoa mixture, alternating between the two and using only a couple of tablespoons at a time. Add the espresso powder and vanilla at the end, mixing until combined well.  Before assembling the cake, remove the layers from the freezer. Make sure the layers are level by using a serrated knife to trim the tops. Set the first layer on a corrugated cake round, stand, or platter. Take a couple of spoonfuls of ganache, and slowly smooth out on top of the layer in a circular motion until most of the cake is covered. Place another cake layer on top, and repeat with the ganache. Place final layer on top, and place cake in fridge to let the ganache harden, about 5 minutes. Once ready, remove the cake from the fridge and do a "crumb coat" of frosting on the top and on the sides, using only 1/3 of the frosting. Place in fridge and let set for about 5-10 minutes. Then, spread more frosting on the top and sides, covering the crumb coat. Make sure it is smooth and even. Smooth the leftover ganache on top of the frosting on the very top of the cake. Pipe additional frosting in a design around the ganache if desired.  Serve immediate, or place in fridge to serve the next day. Prepare a 9 inch rectangular ceramic baking dish by buttering the bottom and sides. Set aside. To make the apple filling, combine the cinnamon, coriander, cardamom, brown sugar, white sugar, corn starch, lemon juice and salt in a large mixing bowl. Add the cubed apples and mix until all apple pieces are covered. Then add the brown ale and mix until all ingredients are combined. Pour mixture into the prepared baking dish.  To make the crumble, add 1 cup oat flour, 1 cup rolled oats, brown sugar, and salt to a medium bowl. Then cut in 6 tbsp cold butter and add 1 tbsp brown ale. Mix with a fork, using the back of the fork to separate the butter and create a sort of mealy consistency. It should be damp, but mostly dry kind of mixture. Then spread the mixture on top of the apples in the baking dish, creating a crumble layer. In a separate bowl, combine the remaining 1 cup of flour, 1 cup oats, and 2 tbsp brown ale. Using a fork work the ingredients together until combined. Take the mixture and layer on top of the crumble layer in the baking dish. Cut remaining 2 tbsp of butter into cubes, and place the cubes of butter in 4-5 rows on top. Place the apple crumble in the oven, and bake for 50 min, or until top is golden brown and edges are crispy.  Serve immediately. Optional: serve with fresh vanilla whipped cream or vanilla ice cream.</image:caption>

      <image:caption>I'm Kelly Campbell and I'm a lifelong baker, recipe designer, self-admitted chocoholic, dessert fanatic, bread enthusiast, fruit fan, coffee addict, sugar lover, and Farmer's Market regular. Outside of the food realm, I'm a wife, mom to two boys, hockey and tennis player, marketing expert, world traveler, and never-ending storyteller.  Ever since I was little, I have had a connection with food. It's there for every holiday, celebration, success, failure, love, and loss. You name it, tasty meals and yummy desserts have had a way of being placed in the center of my life. Also, I have a notorious sweet tooth, which I know was passed down to me by both of my grandmothers. Grandma Penny made the best Christmas cookies - the kind that melt in your mouth and make you eat twice as many as you should. She also mastered Lemon Meringue Pie, which my grandfather used to request every birthday. Grandma Thelma, on the other hand, was famous for her Fresh Cherry Pie. She made it using freshly picked cherries from the cherry tree in her backyard, as my father always recounts. I never had the chance to eat a slice, but the sheer thought of it makes my mouth water. I started baking when I was just a little girl by helping my Grandma Penny in the kitchen. Every visit, it seemed we baked something from scratch - chocolate chip cookies, cupcakes, fudge, Christmas cookies, pie, cinnamon rolls, and more. It seemed that I always left her house with a new baking tip each time. As I grew, so did my kitchen skills. I went from being the "assistant" to the lead baker in the family. In high school, I partnered up with a friend one summer and we ended up starting our own cookie company called "Williamson &amp; Meyer". Even though we didn't have cars, we delivered some of the most amazing homemade cookies to our friends and family, ultimately turning a profit. Not bad for a summer start-up!  And since then, baking has turned from a lifelong passion into a super fun side gig for me on top of my normal marketing day job (check out @sunnysideupmktg for that side of me!).  How did COCOHAUS come about? Well, the idea first came to mind while I was on my honeymoon in Austria with my husband in Fall 2013. We spent almost every afternoon on our trip having a dessert break at the nearest cafe that we could find, and there was just something about the sweetness of the pastries we tried, the calming cafe atmosphere, and the pride of the waiters serving us that created some of our most precious memories from that trip. I remember each dessert vividly as if it were yesterday - the creamy espresso layer cake, dark chocolate Mozart torte, and the strawberry jelly roll cake, among others. But what I remember most besides the food is the happiness and love that my husband and I felt during those moments - it all plays back in my mind when I'm reminiscing about our trip. When we arrived home, all I wanted to do was recreate the experiences and the feelings that we had in those cafes overseas.  With that, COCOHAUS was created. It represents a melting of two things I hold near and dear to my heart - a sweet life and a loving home. COCOHAUS is more than just a food blog - it's about sharing authentic stories that are sparked because of food. It's about creating sweet memories.
